Amaranthus

•Amaranth in Greek means "everlasting".
•The Aztecs knew it as the "food of immortality", while in India, amaranth grain is known as "rajgeera" meaning, "the king's grain".
•Amaranth leaves are similar in taste to spinach but with a stronger flavor and cook very easily.

HEALTH TIPS

  • • Amaranth leaves are also a wonderful astringent, and make a great wash for skin problems like eczema, and a wonderful acne remedy.
  • • Amaranth is highly vitamin-rich and is a good source of vitamin A, vitamin B6, vitamin K, vitamin C, folate and riboflavin.
  • • Highly recommended for osteoporosis processes for their content of calcium and magnesium, as well as highly recommended for cases of anemia by iron in it and whose leaves even contain more iron than spinach.
    • They have much fiber, high levels of oxalates and nitrates.
